300ml double cream
200g Dark chocolate - 70%
2 large egg yolks
3 Tbsp Brandy
20g Butter
Heat cream to nearly boiling melt in chocolate off the heat beat in egg yolks and brandy cool slightly and then stir in the butter makes 4 espresso cups
