Cherry tomato dressing

Use the best vine ripened cherry tomatoes you can find .... ripe and sweet.

Marinade all ingredients overnight and strain

3 Garlic cloves

250ml olive oil

1 Punnet cherry tomatoes

one lemon juiced

a few sage stalks

2 tbsp white balsamic

2 tbsp raspberry puree

salt and pepper

sugar if needed to taste - depends on the sweetness of the tomato
