All you need are the ingredients!

Top tip: Fresh is best!

Blueberry Bran Muffins

1/2 cup egg white

2 1/2 cup almond milk

2 cup all bran

4 tbsp smart balance

1 cup white All purpose flour

1 Cup Brown flour

3 tsp baking powder

1 1/2 cups Splenda

3 tsp bicarb soda

1/2 tsp cream of tartar

2 banana - smashed

2 cup of blueberries or cherries



Oven to 360F

mix eggs, milk, margarine and bran, stir till moist and stand for 10 mins

mix all dry ingredients together and add to the bran mixture

Smash the banana to puree and add to mixture with the walnuts

Fill the muffin moulds

Bake for 20 min
